'10/04/2011} ♥Mee Laksa v.2
When it comes to the food I never bore to eat up constantly, I've always tried to make my own since the day I know how to cook (which was about a couple of years back).
Mee Laksa has always been my Asian food fav due to the sauce's thick texture and its richness. *droool* I did whip up a Mee Laksa recipe but this one is more 'from the scratch' like. So here it goes:
Mee Laksa v.2 (the sauce)
Batch 1 ingredients to blend together:
2 to 3 cloves of garlic
half of large white onion
2 to 3 red shallots
1/2 cup of chilli boh
a teaspoon of shrimp paste
a tablespoon of kerisik (toasted ground coconut)
Batch 2 ingredient:
1 can of sardine in tomato sauce
Other ingredients:
2-3 lemongrass
1/2 cup of fish curry powder
1/2 cup of thick coconut milk
1/2 cup of watered tamarind
salt
------------------------------------------------------------------
Method:
1. Add 4 tablespoon of oil in a saucepan, let it heat up. Pour the Batch 1 and the lemon grass, stir until it's cooked evenly.
2. Add the blended sardines into the mix, stir until boils.
3. Add 1 tablespoon of curry powder at a time until finish. Stir until the mixture is evenly mixed. Add 1 cup of water.
4. Add 1/2 cup of watered tamarind, the desire amount of salt and stir continuously. Again, add 1 cup of water. Stir until the mixture bubbles.
5. Add 1/2 cup of thick coconut milk and also add another cup of water. Still until it's all done!

I have been craving for labu masak lemak like forever. It came cross my head with a flashback where Irwan cooked his dinner one night when we were housemates. I never had the chance to ask him how he did it but I remember him giving me a lecture about pouring the coconut milk at the right moment. 'Kalau inda, mana menjadi'. -_- Well, I might proved him wrong today as I just made my first labu masak lemak! =D
My version of this might be more suitable when you live around the UK cause the original ingredients might be a tad hard to find. I have substituted some ingredients and it still taste very close to home's.
Labu masak lemak
1 squash
1 tablespoon of 'nasi goreng ikan bilis' powder (brought from Brunei) or dried shrimps.
a handful of bean sprouts
a handful of spinach
1/3 cup of milk
1/2 cup of coconut milk
half of large onion, cube-chopped and crushed.
small chilli, salt and black pepper (as desire)

Method:
1. Cut the squash into medium size cubes (not too small or you'll easily squash them while cooking) and remove the seeds.
2. Boil them till soften, soft enough that you can break them with the wooden spoon.
3.In another saucepan, heat up 3 tablespoons of oil in medium heat and mix in the small chilli and onions. Stir til aroma(?).
4. Add the squash and 1 1/2 cup of hot water. Add salt and black pepper for taste. Stir.
5. Add the bean sprouts and spinach. Continue on stirring till the sauce boils.
6.Lower the heat and start pouring the milk slowly. Stir and leave it with the lid on.
7. Now add the coconut milk, a little at a time and stir.
8. Leave the lid on and let it simmer with the heat.
9. Smell and taste it. If it's super good, then it's ready! =D
I know I'm not the best cooking instructor there is in this cyber world, at least I know how to cook decent dishes. >_<

'5/25/2011} ♥Newcastle, Fieldtrip and what I have been up to.
It is definately been ages the last time I updated my blog. It never crossed my mind how tremendously busy it is to take my master in Newcastle. That huge gap that I have been MIA, a lot has happened in my life. For instance, I bought two adorable rats, James and Jasper. =) But they're not with me anymore.. I gave them away cause I didn't have time for them as I had a handful of work to do for my course. At least they're in good hands now. <3
Last 2 weeks, I had a fieldtrip to Nice, France and honestly, 80% of the time, I wasn't enjoying myself much due to some reasons I prefer not to 'expose' (Believe me, I'm sooo wanting to blab every bit of it but naaah...).
Anyway, here's some sites we visited.
The Malsappet Dam.
This dam collapsed many years ago, and it was deadly. I don't bother to write on the detail cause it seems I'm writing down another report about this place. -_-" Want to know more about it, GOOGLE!
Big big pyrite fossil! Oh yes, I was extremely excited looking at this. =D
This is somewhere we were on top of the mountain, and this was my first ever to hike, well anything! Mark, my colleague was amazed how I managed to climb all the way up with sneakers. Well, I am an inexperienced hiker or anything what we were doing back there.
In the Alpes, we stayed in a farm hostel owned by a buffy guy (was John his name? I forgot..
D=) with his family and horses and dogs and cats and donkeys. We stayed there for a couple of nights and went back to Nice, sharing a room with Ariza and Esra.
Nice.
The last day, we headed to Monaco. Why? Another task for the report. The place is just filled with people. Me don't likey. =((
Well, that's the end of France, I can't say much about it cause:
1. there's so much to write about and pictures to put in.
2. I'm too lazy and need to work on with the report related to all this.
Ok, I'll share a FEW pictures what happened in my life.
Went to Machester to meet up Ipin, and had tons of fun with all the Brumanchies with us. =)
I went to Olhao, Portugal for my short break from uni work.
I also went to Liverpool, I know I went there already but I'm so in love with Liverpool!
And this is in South Shield, located near Newcastle.
Well, my time is up, distracting myself out from work for about 15minutes. Now, I need to shower, eat, go uni and continue on with my bloody work! *STREESSS*

'8/12/2010} ♥Back home
After 3 full years of degree studying, I finally graduated! *JOY*
Alhamdulillah, Alhamdulillah. =')
Back in Brunei, I notice a lot of my 'little' cousins, nephews and nieces aren't so little anymore, that's for sure. Not being around in Brunei that long, little things mean something to me now. It's a part of growing up, I guess.

It's nearly a month since I gotten back from UK,weeks of meeting up friends and family. And oh, a week trip to Tawau via bus with my uncle and his friends. Awie and myself were the youngest of the group and the rest were about at the age of 50 and up. I just couldn't figure out how could they stand the 24hours bus trip from Brunei to Tawau? It's just ridiculous! And I thought urang tua ani inda 'cakah'. LOL!
And I also had my first solo trip in Asia which is in Kota Kinabalu. And that will be my LAST time ever to travel solo in a country which is not safe for a single woman to travel alone. But nonetheless, I enjoyed my trip! <3

Ibu,
We just talked on the phone lastweek, talking about my future ahead.
I've promised you that I will do my best to get the best I could possibly can in life,
I also promised when I get back, the first thing I will do was to visit you as soon as I'm back there.
Now you're gone. I can't help but feeling that you've left me here.
You were my ONLY aunty who really loved me.
To lose you, it's unthinkable.

I can't help it that I'm constantly crying but I do believe, Allah Maha Kasih.

I've always passed by lush store for almost 3years and I never had the appeal to pay it a visit. As I assumed it was a typical soap store.
But after I watched this
guy, Richie Nickel reviewing their products, I got interested as there's a lot more than soapy bars. And the products are animal test free and vegans. =) Which I'm really happy about. Honestly, I'm the kind of person who cares about the environment but I still love my meat and seafood feast, it's the ay the foodchain goes.
Stuff I bought. =)
And this, I kind of buy this cause I'm really curious how my hair will turn out after I use it. And in the plus side, this is a really good substitute to liquid shampoo whenever I travel somewhere.
When I got home, hopped into my bed and took a nap. The smell from Lush products has completely occupied the whole bedroom. It gave a nice florally sense to it.

Another week holiday of funNess!

We had some little exploring around Belfast and a night stay in Dublin.
Accomodation we stayed in Dublin. It was really cheap!

Putri's last day in Belfast, I finally had the time to bring her (and myself) to
Streamvale farm which is approximately 20minutes walk from
Ice Bowl Dundonald. And seriously, every single tiny creatures in there are just soooo adorable!

Putri had the knacks handling the chicks. Somehow she could make them fluttered.
Then, we headed back to the
Ice Bowl and played bowling and ice-skating. The last time I skated was during my first year and that's it cause I didn't like the falling bit of skating. Really painful!
And this time, I didn't fall at all.
*yeay* But guess who did?
*ehehe*
Ripin was really excited as this was his first ice-skating. But as soon as he stepped on the ice rank, all his balance just went straight out of the window.

I guess he was so terrified and al wobbly, he had no choice but to grab for support.
But as time went by, he eventually could skate all by himself. *proud*
Shazleen and Putri had a skate race and obviously, Putri nearly fell but didn't. =)
As it's obviously I won't be regularly posting my blog as often now as this is my final year. But I know as soon as it's done and over with, I'll start blogging and travelling like mad! =D
